Born in Great Britain centuries ago, now this cheese is one of the most famous around the world.
We honor this cheese by making a careful selection of the most special pieces of our Cheddar Cheese and we let them mature for at least 6 months. The result is a complex, aromatic and elegant cheese.
Our Aged Cheddar Cheese is a masterpiece refined in the Highlands of Jalisco, Mexico.
Of semi-hard, slightly brittle and occasionally slightly soft, its color is straw yellow and with intense aroma of boiled milk, butter, nuts, sweet cream and sporadically pineapple fruit flashes, as well as other ripe citrus. Upon reaching the palate, its creaminess covers our mouths, leaving a pleasant and long aftertaste.
Its versatility of use makes it ideal for sweet or salty food, it is excellent for fondue, to gratinate and pair with wines. It is the perfect companion of walnuts, almonds, honeys and olive oil.
