The NAVARRO Aged Cotija Cheese is one of the most traditional cheeses in Mexico, its production is limited to specific areas of Jalisco and Michoacán (Jal-Mich mountain range) and is present in local, regional and national cuisine.
The reward of giving value to time is in our 20kg pieces, which are aged traditionally for at least 12 months to achieve their maturation, following strict quality controls.
The NAVARRO Aged Cotija Cheese is a tribute to that tradition, an exceptional product for all types of food.
It is a hard, dry cheese, with granular and brittle paste, its color is pearl to straw yellow, golden streaks given its maturation. With intense and penetrating aroma of mature cheese and some floral hints. Its flavor is powerful, marked with salt, with acid touches to crown the aftertaste and a long and pleasant persistence.
Its versatility of use makes it ideal for sweet or salty food, it is a great garnish for pasta and excellent for contrast pairing in dessert wines. Great garnish in desserts, mainly with chocolate.
Fresh cow's milk, salt, enzymes and calcium chloride.
