100 grams Manchego Cheese
1/2 cup bacon
3 eggs (filling)
1 cup whipping cream
1 cup flour
4 tablespoon margarine
1 tablespoon sugar
1/2 cup milk
1 egg (dough)
1/2 teaspoon grated or powdered nutmeg
1 tablespoon pepper
1 teaspoon salt for the dough
Margarine to oil the mold
Flour to flour the mold
Salt for filling to taste
Vegetable oil to taste
1. Preheat oven to 180ºC.
2. Sift the flour and form a volcano on the table where the dough will be knead.
3. Add salt and margarine cut into pieces. Mix with your hands until you get a sand-texture dough. Make a volcano, add the egg and sugar to the center, mix well forming a ball. Gradually add the milk crushing and stirring the dough forming a ball. Continue until smooth.
4. Wrap dough in a cloth and refrigerate for a couple of hours.
5. Finely chop the bacon. Finely grate the Manchego cheese. Set aside separately.
6. Brown the bacon lightly in a little oil, only to take color, taking care not to burn.
7. Beat 3 eggs. Mix with the cream. Season with salt, pepper and nutmeg.
8. Add the Manchego cheese and mix well.
9. Baste and flour a pie mold.
10. Extend dough with the help of a rolling pin, to a thickness of 0.5 cm and to a size to cover both the bottom and the walls of the mold. Place it in the mold and punch the entire surface of the bottom with the help of a fork.
11. Empty the filling on the dough, taking care that it is approximately to fill one quarter of the mold.
12. Bake for 35 minutes.
13. Serve hot.
