200 grams of Cheddar Cheese
12 corn tortillas
3 red bell peppers
4 spring onions
1/2 cup of corn grains
1 tablespoon of olive oil
Salt and pepper to taste
1. Grate the Cheddar Cheese. Set aside in refrigeration.
2. Clean the bell peppers, remove seeds and veins. Chop in medium squares. Set aside.
3. Chop the spring onion in squares of the same size, including the green part of the tail.
4. Heat the olive oil in a frying pan over medium heat. Once it is very hot, sauté the onion and cook until it is translucent.
5. Add the bell pepper and lastly the corn, cook while stirring constantly.
6. On a frying pan or skillet, place a tortilla, add Cheddar Cheese and stewed bell pepper, fold and let the Cheddar Cheese melt.
7. Serve with spicy sauce to taste.
