Mushroom quesadillas

INGREDIENTS

250 grams Adobera Cheese

8 whole flour tortillas

8 mushrooms

2 guajillo chiles

1 garlic clove

2 tablespoons olive oil

Salt and pepper to taste

2 tomatoes

1 tablespoon onion

1 tablespoon cilantro

1 serrano pepper

Salt to taste


PREPARATION

FOR THE SAUCE

1. Mince all the ingredients. Add the amount of serrano pepper you want. Season with salt to taste and mix well.

FOR THE QUESADILLA

2. Mince garlic. Clean the guajillo chile, remove veins and seeds, and cut into thin strips. Set aside.

3. Cut mushrooms into thin slices.

4. Heat olive oil in a pan. Once hot, add minced garlic and cook for 5 minutes. Add guajillo chile and cook a little. Add mushrooms, season with salt and pepper. Cook for 10 minutes and remove from heat.

5. Grate Adobera cheese finely. Set aside.

6. Heat a skillet.

7. Make quesadilla with grated Adobera Cheese and mushrooms. Fold and leave in skillet until Adobera Cheese is melted.

8. Serve with sauce.
