250 grams cubed Cheddar cheese
3 cups skimmed milk
1/4 minced white onion
1 tablespoon chicken broth
5 grams of fine chopped parsley
1 cup water
2 tablespoons olive oil
1.Chop Cheddar cheese in small cubes. Set aside part of the cheese to decorate.
2. Mince onion and parsley. Set aside separately.
3.Heat olive oil over low heat in a pan of sufficient size (1 liter). Once hot, sauté onion. Add Cheddar Cheese cubes and cook for 3 minutes or until lightly browned. Remove from fire.
4. Blend mixture with a cup of water, skimmed milk and chicken broth.
5.Strain and pour into the pan. Cook over medium heat until it boils, stirring frequently.
6. Serve hot decorated with parsley and cubes of Cheddar Cheese.
