Shrimp Quesadillas

INGREDIENTS

8 slices of Yellow Cheese

100 grams of Adobera Cheese

12 corn tortillas

18 small shrimp

2 spring onions

1 clove of garlic

1 serrano pepper

1 tablespoon of olive oil

Salt and pepper to taste


PREPARATION

1. Clean the shrimp by removing the shell and removing the vein from the center with the help of a small knife. Once they are clean, finely chop them. Set aside.

2. Chop the garlic, the onion with part of the tail and the serrano pepper. Grate the Adobera Cheese and cut the slices of Yellow Cheese into small squares. Set aside everything separately.

3. Put the olive oil in a frying pan to heat. Once it is very hot, fry the onion. Cook a little and add the garlic and cook until it is sautéed. Add the chopped shrimp, stirring constantly to avoid them from sticking. Finally, add the serrano pepper. Season with salt and pepper.

4. Remove from heat, add cheeses and mix.

5. In a frying pan or skillet, heat the tortillas. In the center of each put 2 tablespoon of the filling, fold in half and cook a little until the cheeses melt.

6. Serve hot and it can be served with green or red sauce or guacamole.
