250 grams Manchego Cheese
18 slices baguette bread
3 roma tomatoes
3 tablespoon fresh basil
5 tablespoon olive oil
2 garlic cloves
1 tablespoon sea salt
2 tablespoon balsamic vinegar
1. Preheat oven to 80ºC. This recipe will be prepared at low temperature all the time.
2. Mince garlic, passing the knife several times until it forms a paste. Mix with olive oil and set aside.
3. Cut tomatoes into thin slices. Spread the slices on a tray and varnish with the garlic oil all over the surface. Sprinkle sea salt on top and bake for 20 minutes, without browning, just so the tomato dries a little.
4. Toast the slices of bread in the oven, just to brown a little. They can be varnished with a little herbal oil if desired.
5. Add a slice of Manchego Cheese the same size of the toasted bread to cover the whole surface with cheese. Place basil leaf on top, followed by slices of tomato. Finish with a little olive oil and a few drops of balsamic vinegar.
TIP: It can be served as an appetizer or as garnish to salad
