1/2 pack (454 grams) of phyllo dough
1/2 cup of walnuts
2 tablespoons of butter
2 tablespoons of sugar
1 pinch of ground cinnamon
3 tablespoons of honey
2 lemons
1/2 cup of water
1 cup of vanilla ice cream
1. Finely chop the walnut. Mix with sugar and cinnamon. Set aside.
2. Obtain the zest of the lemons and also their lemon juice. Set aside separately.
3. Grate the Cheddar Cheese in fine. Set aside.
4. In a frying pan, put the lemon juice and dissolve the honey and water. Mix well, boil and lower the heat. Leave to reduce for 5 minutes in low heat, beat constantly to prevent sticking. Remove from heat when finished. When cooling mix well with the sweetened walnut.
5. In a frying pan, melt the butter.
6. Spread a sheet of phyllo dough on the table where you are going to work. Grease with the melted butter and place another layer of phyllo dough on top. Spread a layer of the walnut mixture and a layer of the grated Cheddar Cheese on the surface. Repeat this process until you have 4 or 6 layers on top, depending on the desired volume. Finish with two layers of phyllo dough and mark diamonds with the help of a knife.
7. Bake at 200ºC for about 10 minutes. Reduce the temperature to 180ºC and let it brown well for 20 minutes.
8. Cut in the diamonds that had been marked and serve with vanilla ice cream.
